Reassigning an e-mail address

Let's say I have an e-mail address: "johndoe@jd.com" and it is running off of an e-mail server called "email.majorgeeks.com". Now, let's say that I want to reassign the e-mail address "johndoe@jd.com" to a server called "email.minornerds.com".

How do I unassign it from the majorgeeks server and then set it up at the minornerds server? And, can it be done with out an interrupting one's ability to send to the johndoe@jd.com address?

The reason I ask this is because I have a friend who had bought an e-mail address from verizon, complete with a unique domain name for the e-mail, but somehow accidentally set up the e-mail to go through his old ISP/e-mail server provider at MagPage.

Most email servers let you forward the email to another server. Look at the server documentation.

That would probably solve the continuity problem as I could have the e-mail forwarded during the transition from one server to another. However, we want to get rid of the MagPage server altogether, so ultimately, I have to kill the e-mail account on the MagPage server. Unfortunately I have no idea how to create or kill e-mail names on servers. That's what I need to know how to do more than anything as it seems that the e-mail address (johndoe@jd.com) may be assigned to more than one server (that is both the MagPage and the Verizon server--assuming that's possible), and the internet seems to be choosing the mailbox at the MagPage server, rather than the Verizon one.

Ok, apparently this is a forwarding issue after all. I appreciate the hint at that, Cat5e. This e-mail stuff was just beyond my area of knowledge and I was holding inaccurate theories on how it worked.
