What's For Dinner Tonight??

    This was my New Year's Eve dinner:

    1. Pre-heat oven to 375F/190C.
    2. Boil pasta according to directions. Drain and set aside.
    3. Brown 0.5 lbs/230g Italian sausage in olive oil. Add generous amounts of fresh pressed garlic while browning.
    4. Add about 1 cup / 2.5 dl Marinara sauce and simmer for 10 minutes
    5. Combine pasta and sausage mix in an oven safe casserole dish.
    6. Completely cover everything with a 50-50 mix of grated mozzarella and Parmesan cheese
    7. Bake in oven for 15 minutes
    8. Add additional grated Parmesan as you like, when serving.

    Yes dont see why not, also could see it being ok with lamb.

    Small town in the middle of nowhere with basic small grocery, no lamb or veal.


    The chili was good but still needs some adjustments on the amounts of spices used I think.

    Looks good Mimsy. I often buy a cooked rotisserie chicken at the grocery and use it in one of several recipes. We particularly like Creamy Chicken Noodle Casserole. So simple and easy. Just cooked chicken, cooked egg noodles, cream of chicken soup, cream of celery soup, sour cream, and milk. Top with bread crumbs, dot with butter and bake 350 degrees 30 min.. Sometimes I add a mix of veggies to it also.

    It was good, but very messy. When I went to remove the chicken from the slow cooker, it fell apart on me. :p

    This is so amazing, because...
    I make a very similar pasta dish, and I'm pretty sure you, Mimsy, will love it. And I know I'll like yours.

    Last night I used some of the five-spice pistachios left from Christmas for crusted boneless pork chops, then added some broccoli with bacon and feta. And then I realized I only had two things about five minutes before dinner, so I opened a can of beets and threw them in the microwave. Two out of three ain't bad! ;) 16-01-11 dinner2.jpg

    Breakfast casserole: fresh sausage, bacon, green pepper, garlic, the new caramelized flavour French's fried onions, and cheese. Lots and lots of cheese.

    Cooking a roast, potatoes, onions, and carrots in the crockpot today and what is leftover will go in the Veggie and Beef Soup pot with added veggies tomorrow. :)

    Today I'm making bacon-beer-cheese soup and trying out a new recipe for no-yeast bread to see if I like it. Also on tap (as soon as I can make myself get out from under this blanket) is a couple dozen breakfast burritos for my freezer. That's gonna take more coffee, though, since I have to cook sausage, bacon, potatoes, eggs, and onions/green peppers before I can assemble and bake them.

    Pan grilled pork tenderloin, mac and cheese, and lettuce salad and chocolate brownies.

    My apology! Also for the late reply.
    The food experts will never use 'instant sauce' but when you don't have time, it can be used as a base for the pasta sauce.

    Ingredients:
    250 gram regular beef mince.
    250 gram pasta (macaroni, shells, screws, etc.).
    1 packet instant monkey gland sauce (Royco or Knorr).
    4 tablespoons peeled & chopped tomato & onion.
    2 teaspoons freshly crushed garlic.
    ½ a teaspoon Italian herbs.
    2 cups grated cheese (cheddar, gouda, colchester or similar).

    Method:
    Cook pasta as per the instructions, and drain.
    Lightly fry mince in it's own fat - use a non-stick frying pan with a lid.
    Prepare sauce as per the instructions.
    Add sauce, tomato & onion, garlic and herbs to the mince and let it simmer for 10 minutes.
    Combine the pasta and mince mix in an oven proof dish, and sprinkle the cheese over.
    Bake in a pre-heated oven (180°C) for 15 minutes or until the cheese starts bubbling.

    For the experts...
    If you make your own monkey gland sauce, leave out the tomato, onion, garlic & herbs.

    I am beginning to think I have a very limited knowledge of food ingredients since some of you mentioning things I have never heard of.:p. Like monkey gland sauce and colchester cheese.

    Is that what we call ground beef?
    You are saying it is pasta sauce mix, right? We do have Knorr products here. I will have to take a look.

    Yes.
    No. Monkey gland sauce is actually for steaks and burgers - I like to experiment and it turned out great for a pasta dish with ground beef.

    Kicking it up a notch can sometimes turn out good.

    We had breakfast for dinner. Sausage and Gravy, Eggs, and Biscuits.

    Dinner Time "Down Under":
    • Chicken Schnitzel (herbs mixed into egg mix before dipping into bread crumbs for light pan fry in olive oil)
    • Mixed salad adding black olives, kale (instead of lettuce), slices of sweet peppers stuffed with fetta cheese, topped with a couple spoons of plain yoghurt; lighty sprinkled the whole salad with peppers' oil mix, Italian herbs, sea salt and ground black pepper.
    • Accompanied with a glass of an Australian red.

    Thanks to frozen and/or canned ingredients, 30-minute shrimp stir-fry! I skipped the rice to save on carbs, and also because we've eaten Spanish rice twice in the last few days.

    It's said canned and frozen vegetables' goodness are maintained so long as there are no additives. Your dish looks yum.

    I like stir fry. So often have Thai dishes. One I'll do tonight - Green curry chicken with green peas, green peppers, broccoli, Kaffir lime leaves, oyster sauce, coriander and basil leaves with coconut milk.

    (By the way, your pot of basil leaves in the photo thread are amazing! I struggle to get mine to grow.)

    Agreed. Especially when the vegetables are IQF (Instantly Quick Frozen).
    It's difficult to always buy fresh vegetables when there's just 2 of you.

    Tonight Southern Comfort Food: Chicken-Fried Chicken Breast Steaks with Gravy, Mashed Potatoes, Biscuits, and Sweet Tea. Probably should add some green veggie.:rolleyes:

    I don't eat shrimp but the rest looks good. That same recipe with chicken should be good also.

    Yum! I haven't had pork in a while, and those look amazing!

    Tonight I did a skillet dinner with chicken, white and green asparagus, mushrooms, and yellow squash in a lemon-pepper-wine sauce.

    So does your skillet chicken!

    My pork sirloins were rubbed with a spice blend and grilled on high for five minutes. Spice rub was:

    1 tablespoon Provencal herb blend
    0.5 table spoons paprika powder
    0.5 table spoons salt
    0.5 table spoon fresh ground black pepper

    In case anyone wants to try it. :)

    Marinaded lamb chops, kessler chops, boerewors, and steak & kidney pie. :D :D :D :D

    Followed by ginger organic yoghurt.

    Finally back in the kitchen! Moroccan meatloaf (ground turkey, raisins, red onion, yellow bell pepper, couscous, cinnamon and curry powder, topped with chutney), creamed spinach casserole, and cottage cheese.

    Interesting combination of ingredients for the meat loaf Sgt Tibbs. Never would of thought about using raisins or cinnamon. Looks good but no cottage cheese for me.
    Since I did not get any suggestions on a brine for my turkey breast I went with a rub of garlic and onion powder, paprika, pepper, salt, and olive oil. Turned out nice. Tomorrow and a few more days Turkey Sandwiches for lunch.:)
