Spoofed email/moms email hijacked by hackers

Every now and again someone or something, somehow hacks or spoofs my Moms email and sends spam to all her contacts. The emails look like this:

That's a more clean spam that I've received. She has an AOL email. I don't know how good their authentication is, but the only thing I could think to do was to tell her to run her a/v software and make sure her port settings are set to encrypted.
