I usually manually download Windows update (kb123456, etc.) files after I've installed them on my computer as a backup and in case I ever get around to slipstreaming them into an install disk.

The only ones I have trouble with are the Windows Defender definition updates. I can't seem to find downloads of those on Microsoft's site.

Anybody know how to find them?

Ya know what? I'm in the same boat! I've looked all around for Defender updates; they only seem to show up on the Critical Windows Update list, and even then, it's very hit or miss (usually miss).... maybe someone else will post and shed some more light on this for us.

I highly doubt they post them as to use defender you need a legit copy of windows, and the defender update file will change monthly as well. So its really not worth slipstreaming a defender deff, cause its gonna change to rapidly to matter.
