Can't open more than one fresh instance of either IE or Notepad in Windows 8.1

On XP I can open any number of fresh/new instances of IE and Notepad.

On Win 8.1 I can open up only one new instance.

If IE is already open, the task bar icon changes - displaying the name of the open web page, so it isn't available.

In XP I can open up several instances of IE, the task bar icon staying available for further instances.

This isn't particularly bothersome, just curious.

The same happens in Win 8.1 with Notepad's task bar icon.

In XP I can open up as many instances as I like, and I would like to be able to in Win 8.1.

Is there a way to achieve this?

I've discovered that a right click on the taskbar icon of either IE or Notepad opens a menu which includes its own name, clicking on it opens up a new instance :-o

For IE hold down Shift. For Notepad you can use the New > Text document on the desktop.

We cross-posted - you found one way, me another. There are probably others too.
