Windows roaming profiles and polices

Could someone direct me to a site than has some how to's for:

1. Creating and editing user profiles- not creating users. For roaming or mandatory.

2. Create group and user policies for domain.

I've search for hours looking for just the above and I'm sure its there but mixed in with other information so it just gets lost in the search.

Also a intermediate book that you would suggest for Win 2003 R2 Standard.
