Why are dual core processors better than single core?

All applications benefit dual core to some degree. Applications don't have to be multithreaded, the load is still balanced between the cores, making your system overall more responsive when multitasking.

So in a way, yes, all appliations benefit. Ones that are multithreaded benefit tremendously.

Some games have quirks with it though.

The new Elder Scrolls game, Oblivion is multithreaded and benefits from it.
