Good Wholesome Recepies

    Now I have various ailments including Diabetes and I am looking for some tastey recepies that would be beneficial to my health ( I am sick of eating the same crap day in day out), I am not obese but I am over wieght (14st 4lb -was 16st 1lb 3 month ago)and been told I need to lose more as I am having issues with my liver and kidneys, can't exercise much due to the other problems I have, so diet is the only way for me to go realy.
    Any good old homemade recepies without alot of suger/salt and fat would be great.

    Thanks for any input.

    I recently began cooking for a near-diabetic, so I've got a ton of them. What do you like? I can offer you fish, chicken, pork, vegetarian and salads.

    We never did do dessert, so I haven't really got anything there, sorry. But everything else I've got in spades! Typically a meal for us involves less than 25 grams of carbohydrates. If it's over 20g, then almost always there is over 5g of fiber so the math works out.

    As for salt...just leave it out, unless you're baking. Seriously. 99.9% of the time it's unnecessary, it's just goofy to get used to not tasting it. If you feel you need some, get yourself a sea salt grinder and add it to your plate. Sea salt is better for you, and tastes more like salt than table salt so you'll use less.

    Almost everything I cook is already low-fat, so we should be good there. :-D

    Sgt. Tibbs thanks for the links ;) they hold a wealth of information, I am on looking through them now.

    As for the food recepies I like all meats/fish/fruit and veg apart from parsnip and I am alllergic to mango's.

    I would of thought Tim W would of been able to supply me with a good CAKE selection :-D:-D:-D

    Stevia is a natural sweetener unlike artificial others. It can be used by diabetics too. It usually can be purchased in a health food store. Here's some info on it http://www.stevia.com/index.aspx Some recipes if you have a sweet tooth are also shown.

    An acceptable salt substitute could be potassium chloride, like Morton's salt substitute but this needs your doctor's approval first. I like using dried herbal mixes out of a bottle shaker which don't contain salt. I also like cooking with red wine which seems to intensify the salty flavour without adding any salt.

    MSG could also be used as a flavour enhancer, as a powder(like Accent) or foods rich in it, like mushrooms, I love using dried and powdered mushrooms. You might want to consult with your doctor about MSG. I'm not diabetic but fighting HBP even though the odds are against me that reducing salt will reduce blood pressure.

    Iain I deal with diabetics at times in the clinic I run, my main area is Age Related Macular Degeneration but I do deal with diabetic projects and the best thing you can do is as well as the great links already posted is to visit http://www.diabetes.org.uk/ and even speak to them, they are a superb help group.


    also think of what you eat, look at the fat and salt contents, also think as most diabetics have high Cholesterol is to have Benecol (not an advertisement but I'm not diabetic but I use these spreads and drinks to keep Cholesterol at bay and recipes at the site also)

    I would imagine being in the UK and Diabetic you are in the National Screening Programme, where as your local Health Authority screen you each year with a series of photographs of your retina? as this is a good way to detect early onset Retinopathy or Maculopathy as those can cause in diabetics blindness.

    David,
    Yes i am having my eyes screened yearly, there has been some slight changes but nothing to be concerned about yet!! eye sight is getting worse though got to wear glasses all the time now where as it was just for reading last year!!
    Thanks for the link I will contact them and see what advice they can offer me, I am already trying to lead a healthier life style but other conditions are hindering me mostly, I have joined a scheme that is run in my area (Gateshead West) called Gateway, it is based around learning about how to lead a more healthier lifestyle and how to reduce the amount of food I consume, I have been given a personal drawn up dietry plan that I have to work towards, thats how I have lost the wieght already,but I have been stuck at this wieght now for several weeks, I still need to lose another stone!!! :cry !!!
    it's not what I eat it's the amount I eat :-D. I just fed up of eating the same stuff all the time :(, I am already on statins to control cholesterol I am suffering all the classic affects of the disease expecting parts of me to be falling off soon as I walk/hobble along the street :-D:-D a toe here a finger there :-D:-D. Lifes still good though cos there a lot of folk worse off than me.

    To get used to smaller portions, do it slowly. If you all of a sudden go from eating double portions to single ones you're going to be constantly starving. Your doctor can give you a daily calorie intake goal and some ideas for dieting that'll make it easier. What worked for us was going to 4-5 small meals per day rather than 2-3 bigger ones.

    There are also a number of foods that will fill you up, yet won't add a bunch of stuff you don't need. Snacking on non-starchy vegetables (celery, bell peppers, broccoli, etc.), watermelon, cheese (not too much, as it's fatty), nuts (particularly almonds and pecans) and pickles will fill the empty spot without screwing up your diet too badly. Also sugar-free Jell-O is good for filling in the holes without causing too much trouble.

    Vision change, do you wear glasses already? If a change in amount of letters read off the chart then that's not good.

    statins meds i guess is Metformin?

    Mr. Food has a diabetic cookbook. My mother is diabetic and she enjoys several of the meals in it.

    There's even a recipe for a diabetic friendly cheesecake.
