I prefer flavour over heat. It's not that I don't like heat, it's that I don't see the point in eating something so hot it makes me miserable from the second I see it until an hour after I flush it away.

We have friends who love the hottest peppers they find and try to out do each other growing their own.
I am a wimp when it comes to hot & spicy and not a huge fan of raw peppers. I prefer mild. If a recipe calls for something hot/spicy I usually cut the amount in half or add a little something sweet to offset the hot.

I don't have any Ghost chillies, yet. I had Jalipino and Birds Eye Chillies in my meal, tonight.:yum

I am also with Sgt. Tibbs. I like a little heat, but not the extreme stuff. I like to taste the spices, not the burn. Found a little spice store downtown, love going in there and getting different peppers to grind up and use.

I'm one of those fools, who spent $100 on a bottle of extract.

Learned my lesson on how potent this stuff can be. I didn't have gloves, or safety goggles. I put a drop of it in my food while cooking, and right at that time steam rose up and hit my face. I couldn't see out of one eye for about 5 minutes or so.

Long store short, even after 3 days after that incident, I couldn't rub my eyes, since my skin excreted the oil from that extract and caused my eyes to burn again.

    Fun times.

I've used the extract a few times since, but I'm more cautious.

It was 7 million on the scoville scale, btw.

I love the hot stuff it was a passion of mine for a quite a while, it's strange how some people hate heat and some people love the heat, I definitely love the heat.

I've grown hot chillies, bought hot chillies but never pulled the trigger on some extract, the hottest stuff I cook with and eat regularly is tabasco hot which is 200,000 scovilles but I use it almost like ketchup it doesn't bother me anymore and Nandos extra, extra hot again just dipping sauce.

If I go to an Indian I often get a Fahl which is the hottest curry they do.

Glad I read this post something to tick off the life list, I remember wanting to buy some of this a while back.

What on earth was that sauce? If you can call it that. The Carolina Reaper is 2.2 million on the Scoville scale.

Thanks for the link. Really interesting names. The extracts are expensive but, they go a long way. The only really potent sauce I have ever known is Tabasco Sauce.

Pretty sure that is water compared to these.

Yeah...Tabasco is too weak for me, although I do use it here and there.

I've been growing and canning my own peppers for about 10 years now.
Mostly jalapenos and cayenne but I need to find a new strain of jalapenos as what I did this past summer were totally lame.
I do what I call a cold pack - just peppers, vinegar and salt/garlic in a recycled glass jar I put in the refrigerator.
There is about 20 jars on the top shelf in the fridge.

    Ever try Thai peppers?

A Thai restaurant I went to has a buffet. Had them sliced up paper thin. In some kind of oil. Looked like thin spaghetti-o's. Put a few on my plate. I was warned they were hot.

The thing I liked about them. Take one on a tine of your fork. Eat it and I couldn't breath for a few seconds. Then the heat went away and didn't kill my taste buds for the rest of the meal.

Well, got the new "sauce" yesterday and tried some today. Wow, very nice. Ingredients are peppers and vinegar. Had some for soup today at lunch, broke out in a nice sweat.

I love Thai food. Went to a restaurant a few years back and asked for the so called "indian hot", or prepare it like you would for yourself. Took about an hour to eat the food, with multiple breaks. Loved it the entire time.
