What's For Dinner Tonight??

    I got one of those halogen ovens for Christmas so seeing I may have time today, I just might do some grocery shopping and find something I can cook in it. I am thinking roast. o_O

    Mostly, I'm always looking for ways to make ultra low carb, low sodium recipes interesting (my mother is pre-diabetic with high blood pressure). And since my recipe page is turning three this summer while the blog to go with it will be two, I have to make new recipes at least a few times a week just to have something to post. :D Right now I've got some mango marinating in a balsamic vinegar mixture that'll be broiled to go with some creamy ham and vegetable pasta for dinner tonight.

    Ooh! Do report back how it works! I've been looking at those as a way to have less heat in my kitchen in the summer, but don't know anybody who has ever used one.

    mmmm....I love Chicken Noodle casserole. When I saw your post, that was such a blast from the past. My mom used to make it all the time when we were growing up. We don't eat it anymore, but ironically she just made it for a sunday dinner about 3 weeks ago. She served it with pickled red beets. Yum

    Wonder if they are the same? Mine is chicken breast cooked, egg noodles, sour cream, cream of chicken and cream of celery soup, milk, and ritz crackers on top.

    My mom's is Egg Noodles (Pennsylvania dutch brand), Chicken breast shredded, cream of chicken and cream of mushroom soups, Velveta cheese.

    There's probably milk in there somewhere as well. Sounds very similar.

    Hey Sgt. Tibbs, been a while. Getting my roast ready to go in but as soon as it's done I'll get back to you. Also throwing in a rack of ribs after so I don't have to worry about supper tomorrow night ... hate cooking after work. Any way I will let you know how it goes. :)

    Well this halogen thing is a trial and error adventure. :( I kind of over cooked my roast, burnt my carrots and potatoes will blow up in that thing. :rolleyes: Think I will do my ribs the old fashion way .. might as well have one good meal this week. :D

    Ouch!

    With a new oven, or really any new cooking appliance, there is always a learning curve. I have a gas range with two ovens, and the upper one is only about half the height as a regular-sized oven. That puts everything WAY closer to the gas flames near the top, and there is a lot less air movement inside the oven as well. Using that top oven has been... an adjustment.

    We had to replace our wall oven and the new one had to fit back into the wall cabinet. The new oven is about the same size on the outside but the inside is much smaller. This causes it to cook hotter then the old oven and like you I had to adjust.

    I now cook things less time than I use to or lower the temp. You can always cook it a littler longer if needed but you can't un-cook something.

    I have a separate oven and range top, and both have been replaced in the last five years. I ran into the same thing with my oven as katkat...the inside is SO much smaller, plus it has to be preheated where my old one did not. The first few times I used it I made those 99ยข frozen pizzas so it wasn't so expensive when I screwed up. lol We've come to an understanding now, but my first season of holiday baking was quite the adventure.

    Tonight I did roasted glazed salmon, smashed purple potatoes, and Parmesan asparagus. Simple, quick, and tasty.

    I made the pork chops with Provencal herbs and paprika again, though this time cooked them in olive oil in a skillet. They cooked a lot more evenly on the grill, so I'll stick to that from now on. Lesson learned.

    Pretty basic stuff...rump steak medium rare cooked with Italian herbs, sprinkling of a sweet red wine served on sliced Turkish Bread roll (used to wipe clean the pan of juices) with a side of fresh salad containing kale instead of lettuce.

    I have a friend who makes vegetarian chili using tofu instead of ground beef, and even our most die-hard meat eating friends can't tell the difference and ask for more. Other than the sub of tofu instead of beef, she makes it like regular chili.

    Had to look up wotsits, but now I know what they are I'm going to have to try that. I may even get fancy... I've got some garlic and herb whipped cheese spread and some artichoke asiago bread that should go nicely. :D

    Duck breast and orange sauce with parmentier potatoes and veg, with wine of course, likely a pinot gregio is for me tonight, had lots off nights out this week as been in London for a few days so boozy/foody nights out with hotel breakfasts YUMS, feeling fatttso now.

    Oddly, I have a Saturday night off, so I'm roasting a chicken with purple potatoes and a creamy lemon-leek sauce. Serving with carrot pudding and totally cheating with a box mix for Red Lobster cheddar bay biscuits. We may even have dessert, since I need the freezer space the berry tarts from Omaha Steaks are in.

    Tonight I had mediterranean tomato, red pepper and wensleydale cheese soup, with one round of bread and butter followed by 2 small jacket potatoes served with butter, salt, and salad with a dressing. I have an organic ginger yoghurt in the fridge but it's almost 2am, and I'm already too stuffed from the dinner earlier.
