I just made strawberries and cream for the first time at Easter, and it was amazingly easy! They're among my favourite. :)

This was yesterday, but I had leftovers of the exact same thing tonight so it counts. :)
Shrimp piccata with zucchini noodles, spiralized carrot salad, Vidalia onion casserole, and blueberry corn muffins. With a blueberry lemon parfait for dessert. :)

It really is! They fly their seafood in daily, and that pasta is better known as "crack pasta".

Tonight I still felt like indulging myself and I had an almost 90-minute break, so I got sushi. I have no idea what the extra two pieces were (they always give me something extra), but the rolls are Kamikaze (spicy tuna over spicy tuna), Michigan (crab, avocado, cucumber, with salmon top and eel sauce), and Las Vegas (fried shrimp, crab, avocado, cucumber, and cream cheese).

I have only tried to cook a spaghetti squash once, I did not know what I was suppose to do with it o_O:eek:. Needless to say it did not turn out great.

    What is spaghetti squash?

  18. Sgt. Tibbs

    Sgt. Tibbs Ultra Geek

You can do it just like regular squash (cut in half, scoop seeds, cut sides down in a little water, bake about an hour at 350F), but then before serving you sort of shred it out of its shell. I've found if I'm doing it like Bob D. did I need to at least drain it but more often saute it in a little oil to remove the water. We use it a lot in place of spaghetti since it's far more carb-friendly. You can also microwave it if you're in a hurry or if it's simply too darn hot to use the oven... Same thing, cut it in half and scrape the seeds, then cut side down in a dish with water. Microwave something like 10-15 minutes.

I cooked my squash in the microwave 5 min then turn 1/3 cook 5 min turn 1/3 cook 5 min clean the seeds and fibers with a spoon then a fork turns the flesh to strands.
I cook the squash whole pierced on each side placed on a paper plate.

Ooh! I didn't know you could microwave them whole! I knew you could roast them whole, but I figured they'd blow up in the microwave. That's even easier, thank you!

Gonna make meatballs and gravy tonight. Don't know if I will eat them on a baked potato or on bread. Or just eat meatballs. ;)

Wrap a piece of streaky bacon around a cherry, and secure with a toothpick. Grill in oven until bacon is crispy.
    I love meatballs and gravy.

For dessert, brownies and Firefly marathon. :)

Just got home from three solid weeks of 14+ hour days, about to commence a whole 32 consecutive hours off. I'm celebrating with a "dinner" consisting of nachos made with chili cheese Fritos, three kinds of shredded cheese, green onion, jalapenos, guacamole, and my niece's home-canned cowboy candy. To wash it down I've poured a gigantic drink I haven't named (Kahlua, Bailey's, creme de menthe, vodka, and heavy cream shaken and poured over ice). There's also some kind of Haagen Dazs in the freezer if I'm still hungry later.

Sunday lunch was fit for a carnivore - mutton ribs & chops, pork rashers, chicken kebabs & drumbsticks, 2 kinds of "boerewors", cheese grillers, cherries wrapped in bacon, "skilpadjies", patato salad, garlic loaf, and "roosterkoek".

Eldon - Surely you didn't eat all that by yourself. That's enough for a small family reunion!

? ? o_O Can you explain these? It is interesting to see what other people eat.;)
Sgt Tibbs have to ask what cowboy candy is also.

I just got a new electric range that has two ovens and one is convection. I think I will have to experiment with temps and times in the convection oven as I have never cooked with it before. Maybe one of you could give me some suggestions.

It's basically candied jalapenos, but she also adds onion, tomato, and some other spices. Kinda like a cross between relish, salsa, and jam, with a lot of sweet followed by a lovely heat. I eat it on almost everything!

OK Eldon Boerewors sounds similar to Bratwurst. Personally I prefer Polish Smoked Sausage.
    Skilpadjies I don't think I would like. I'm a very picky eater.
May give roosterkoek bread a try sometime. Speaking of bacon I say a recipe for a bacon milkshake the other day but not brave enough to try it.

Sgt Tibbs I find that hot-sweet taste similar to that good with cream cheese on some kind of bread or cracker as a appetizer.

    Boerewors is similar, but different.

    Now were're talking! :) And eating... :D
Very popular in SA is smoked cheese grillers - Kielbasa with cheese down the centre. Yummy, to the power of ten.

    This are sinfully good!
Grilled Bacon Wrapped Beer Burger Filled With Cheese.
You press the center of burger with a soda or beer can to make a indention and the indention is filled with a mixture of cheeses or
whatever you like before grilling, wrap the outside with bacon. If you are incline to indulge you might as well wrap some fresh sliced
sweet onion rings with bacon and grill along with the burger. You could bake in the oven also.

    Simply the best.
Adding sliced Kielbasa or Chorizo, or diced Bacon (no fat) to a Mac 'n Cheese dish will transform it into something special.
Sliced Kielbasa or Chorizo, with diced Bacon also make a great savoury tart (quiche).

Single as I am, I am going to cook fish and chips, because whilst I like our local take away, there is way to much fat on everything they do! SO I buy my own and oven the fish and instead of chips I oven some potato waffles. No fat, keep trim and I actually think it tastes nicer too, in my personal opinion of course !!!

    Stay safe everyone,

    SOLD.

Definitely doing that the next time I make macaroni and cheese! :)

Follow-up question: Do you cook the Kielbasa in some way before adding it?

If the macaroni dish is going into the oven to grill the cheese, you can use the Kielbasa slices uncooked as it's smoked. I have used 'uncooked' Kielbasa in a quiche.
If concerned, lightly fry the sausages in a little oil, or steam them in a little water before slicing and adding to the macaroni. I always drain pasta under hot water which also helps to retain the heat.

We do that with it sometimes, too!

I finally got to cook tonight for the first time in about 300 years. Created a new recipe for a steak stir-fry, served with a simple salad of buttercrunch lettuce and borage, both harvested from my back porch.

Thanks, that makes sense. My version of macaroni with lots of cheese goes in the oven for 20+ minutes, since it calls for eggs to be added before baking, so it should be good. I'll add Kielbasa next time and let you know how it went. :)

Kielbasa or Polish Sausage on the grill with Sweet Baby Rays BBQ Sauce. Grill some veggies and corn on the cob.:) If I'm having a crowd I throw on some chicken breast too. Marinade the chicken several hours or over night in a bottle of Italian Dressing or of course make your own dressing.
