What's For Dinner Tonight??

    Well I was in Belfast NI for a few days last week at a meeting and we went to the Belfast Cookery School and Stephen Jeffers as chef for the night was awesome and while the vino was flowing the cooking was just right up my ally...... attached is the recipes he created that are simple but really tasty as hell, the best bit is I also cooked this lastnight, with cod but the potatoes where the same, and my folks loved it and they are not curry type food fans.

    The main can be anything but its the potatoes and the yoghurt dressing that are a winner for me.

    Those sound really interesting, but I'm guessing he adapted it from a recipe for lamb, no? ;)

    Yes lamb was the other choice some cooked (have the printout but left in work, but will post the instructions and any spices he used next week that went with the lamb), I just thought my folks do like salmon so I went with that plus I dont think I'd poison myself cooking salmon hahahaha, thing the potatoes and the yoghurt dressing would go with any meats from a nice BBQ steak to chicken etc

    It just made me giggle that the instructions said to cook the lamb after seasoning the salmon. :D I do salmon fairly often, I'll have to tweak that a little and try it. Thanks for sharing!

    Tonight I lost my mind and used the oven even though it was 90F with 75% humidity. But it was amazing! The salad came entirely from my back porch garden, as did the fresh herbs for the spaghetti sauce. Parmesan chicken bundles, frozen cauliflower with cheese sauce, and salad.

    A favorite combo for us but I cook them separate.

    Tonight dinner is going to be Grilled Chicken Breast, Corn On The Cobb, Black Eyed Peas, and Sliced Tomatoes.

    I've got a mixed vegetable (cucumber, chickpea, red, yellow, and orange bell pepper, carrot, Vidalia onion) and fresh herb (parsley and mint) salad in the refrigerator, and later I'm making a crustless quiche (bacon, zucchini, yellow squash, basil, tarragon, parsley, chives, oregano, thyme). All using herbs I grabbed from the porch this morning.

    I'm a big fan and advocate of Chorizo. Especially when cubed and combined with eggs and potatoes, and served in the form of a breakfast burrito.

    Have a whole pork tenderloin rubbed with seasonings and going to cook it real slow at 225 degrees all day.

    You may like this Mimsy, have this almost weekly can be with prawn (Shrimp) or chicken etc see attached.

    For dessert, after dinner, I'm eating chocolate truffles I made following this recipe. Muuuch, much better than the name makes them sound...! :)

    Things you should be aware of if you want to try them out:
    1. One 12 oz box of Medjool dates bought at my local co-op became roughly 2 cups once the dates were taken apart and the pits removed. It is logical to assume that a 12 oz box of Medjool dates bought from another store would yield the same amount.
    2. You'll need to re-oil your hands a few times during the rolling-and-shaping phase.I left the coconut oil out and just used that. Built-in skin treatment!
    3. These truffles are very sweet. Next time, I will use unsweetened bitter chocolate instead of semi-sweet.
    4. The over-sweetness is very easily dismissed if you pair the truffles with coffee or a good red wine. :)

    Dinner and beer tasting at Graydon's Crossing. We split an order of nachos, then dove into the daily specials. He had their shrimp po' dip (cross between a po'boy and a French dip), I had their pork wings (BBQ short ribs done like lamb chops, side of excellent collard greens). I had a date. :p
