Whats For Dinner To Night.

    Had stuffed shells two nights ago. Last night was filet mignon. Tonight is tomato soup and a turkey sandwich.

    We are having friends over to celebrate us buying our new house and we will start with champagne and a cheese platter with brie, blue vein, tasty vintage cheddar and a round of fruit cheese with apricots, walnuts, ginger and around the outside poppy seeds. On the cheese platter there is sliced apple, carrot, sliced celery sticks to dip in the roasted capsicum cheese dip.
    Then we will have some vegetable soup with a crusty roll.
    The main course will be roast leg of lamb with roasted potatoes, parsnips, carrots, pumpkin and with steamed peas and cauliflower all smothered in pan gravy and mint sauce. This will be accompanied by several bottles of 2001 shiraz out of my cellar.
    Desert is a cheese cake with a layer of jellied mixed berries on top and served surrounded with fresh strawberries soaked in cognac and lightly dusted with icing sugar. We will have a botrytis late picked riesling desert wine and then finish up on fresh espresso coffee with after dinner mints.
    Should be quite a feast and the last dinner party in our old home before we move out at the end of this month:D:cool:

    We had KFC for the first time in ages.......no surprise that KFC is still real greasy......not much more to say really other than it is quick :(

    KFC is making a killing in profits in South Africa even though it's the most unhealthy fried chicken available. :confused: And it's ridiculously expensive. :eek:

    Last summer on vacation we thought we'd grab a bucket because it was easy. Easy, yes. Horrible, also yes. Grocery store deli fried chicken is better, and cheaper!

    Tonight I threw together a stir-fry, since local vegetables are finally starting to appear.

    Hey guys making some thing new with white rice.

    This Recipe might have a little spiciness to it.I am so use to eating spicy foods it does not phase me one bit.

    Ingredients
    • 1 (15.8-oz.) can black-eyed peas, drained and rinsed
    • 1 (15-oz.) can black beans, drained and rinsed
    • 1/3 cup finely chopped roasted red bell peppers
    • 1/4 cup finely chopped poblano pepper
    • Texas Vinaigrette, divided
    • 2 (8.8-oz.) pouches fully cooked basmati rice
    • 1 1/4 cups halved grape tomatoes
    • 1 cup (4 oz.) shredded pepper Jack cheese
    • 3/4 cup loosely packed fresh cilantro leaves
    • 2/3 cup thinly sliced celery
    • 1/3 cup thinly sliced green onions
    • Tortilla chips
    • Garnish: sliced pickled jalapeño peppers


    I am looking for ways to eat a little more healthier.

    Yes Eldon it is good especially if the green beans and potatoes are homegrown fresh from the garden. I go to the Farmers Market to get fresh vegetables and fruit when in season.

    Used a couple of spoons of chilli sauce (which I made up a large jar couple weeks back and keep in the fridge) mixed with Italian seasoning and spoon of oil, before spreading all over chicken breast. Pan fried lightly until chicken browned...meantime, rolled around baked butternut pumpkin, potatoes with seasoning in table spoon of oil before baking. Meantime, lightly steams snow peas and broccoli with vinaigrette and Tuscan seasoning.
    Vegetables on one side, chicken with sauce on other side with couple of dobs of sour cream to lessen the heat of the chilli. Glass of red.

    Chinese was for me last night as my mums birthday yesterday, friday 13th, luckily nothing went wrong apart from I paid for the food, TBH I was going to anyways.

    Mmmmmmmm.....I like some lobster only over here they are called crayfish and don't have big nippers.....mmmmmm.........dipped in butter sauce or even a lobster roll.......delicious :D:cool:

    We went to a Thai restaurant and had an 8 course banquet :):cool:

    The American Classic Hamburger and French Fries with a Coke Cola. Loaded with carbs!!!!:p But it sure was good!:D Tomorrow I'll have a lettuce salad.:(

    If it makes you feel any better, after two solid weeks of eating all the seafood, butter, beer, and wine we could find, I'm going to have to live on lettuce and water for the next two months. Totally worth it, though!! ;)

    Ohhh having a twist on this tonight in a full beef burger with fried onions and peppers with gurkin and mozarella cheese, rounded off with thin fries and salad (salad for the diet... hahahah)

    Fish and chips......grilled Gummy Shark (called Pearl Flake here) fillets and chips and a couple of potato cakes all with a squeeze of fresh lemon and washed down by a nice cool Riesling........Hmmm I might even have some salad on the side.......but then again.........maybe not ;)

    Tonight is Secret Men's Business and I will be having a long dinner with 4 friends where we sit around once every month and catch up with what is happening in our busy lives.
    We each bring an old bottle of red, usually an aged shiraz or cabernet sauvignon, from our cellars although occasionally we have had pinot noir and on very special occasions we have had vintage bottles of Veuve Cliquot and Moët & Chandon champagne.

    We start with two cheese platters, each platter has three types of cheese and sliced fruit and water crackers and also a large platter of antipasto and these are shared.
    Then for my entrée I will have a dozen oysters, half natural and half kilpatrick.
    Next course will be a rare grilled scotch fillet steak with pepper sauce and accompanied with rosemary and garlic potatoes, steamed green string beans and whole baby carrots with herb butter and an Italian side salad. For desert I will have either Tiramisu or Pannacotta and a large double shot cafe latte. Last up might be an after dinner mint and a nip of Penfolds Grandfather Rare Tawny Port.

    Here is a Tasty white rice recipe i made.

    First start off cooking rice.Should only take 5 mins to cook.

    Boil water and add salt
    Pour water (for every cup of rice, use 1¾ cups of water) into a large saucepan with a tight-fitting lid. Bring to a boil. Mix 1/2 teaspoon salt into the water.
    Pour in rice
    Add it to the boiling water.
    Stir once, or just enough to separate the rice
    Use a wooden spoon to separate any clumps. Don’t over-stir: That can cause the rice to become sticky.
    Cover the pot and simmer
    Be sure the lid fits tightly on the pot. Turn down the heat to its lowest setting. Let rice simmer for about 18 minutes, then remove from heat and allow the rice to steam in the pot for another 5 minutes.
    Fluff rice with a fork
    Just before serving, gently fluff the rice with a fork to separate the grains.

    Now after the rice is cooked.

    Here is the ingredients needed to mix in.

    Chop 1 Green Pepper
    Chop 1 Red Bell Pepper
    Chop Fresh Green Onions
    Chop 1 Red onion
    Chop up Fresh Parsley
    Slice up one can of Black or Green olive's or add both for more flavor.

    Add one or two hand fulls of shredded cheese.I prefer Colby Jack Cheese for color and taste.

    You can use these same ingredients in a Egg omelet.

    I made spaghetti and meatballs.It's been a long time since i made meatballs.I found a tasty recipe.

    I switched out Parsley for Green onions.Mainly be cause i did not have any chopped parsley left.

    This Recipe is very tasty.

    The only difference i made other then the one item was.I cooked the meatballs half way in prego spaghetti sauce.And then i heated up the oven to 400.And put the meatballs in the oven for about 12 to 15 mins to finish the meatballs.If you make big meatballs this is the best way to do this.

    The prep time should probably take about 35 mins.

    Hey Pete Reisling good shout with Chinese as I normally go for Pinot Grigio

    Wile that sounds awesome, love meatballs and pasta, agree on green onions.

    Tonight for me is a ham joint soaked in water and kopparberg apple cider and water to remove salt, then oven cooked/steamed with kopparberg again to give te ham a slight applely taste, then veg and I'm weird as I'm having potato rosti https://www.goodtoknow.co.uk/recipes/potato-rosti

    I drink a bit of cider too and enjoy Kopparberg, Bulmers and my favourite is Magners. Rekorderlig also gets a mention if any of the above are out of stock as cider is less common than beer over here. The pub I frequent has Bulmers cider on tap. Over here there aren't many places with cider on tap as patrons are mostly beer or wine drinkers.
    Yeah showing my age a bit because Riesling was really popular in the 70s and 80s then Chardonay took over as the popular white though I enjoy Chardonay, my favourite is still a crisp dry Riesling.
    Another nice drop is a blend of Pinot Grigio and Sauvignon Blanc and this will partner any white meat and maybe veal.
    The ham sounds delicious and after soaking, do you put a glaze on the outside to crisp up the when it is baked? I haven't had one soaked in cider but I have had a couple soaked in Sauvignon Blanc and they were both yummy..........hmmmm might have to grab a ham shoulder and give the cider a try. We are having friends over in a few weeks so it might be worth a practice run.

    When we have a leg of ham we usually make pea and ham soup with the left overs and this is delicious and is a great opportunity to supplement your sodium intake if you think you are a bit low on salt lol;):cool:.

    No wine with dinner tonight, but I'll be enjoying at least one large vodka with cranberry soda later (or possibly finishing off the bottle of Reisling or Pinot Grigio that's in the fridge). Dinner was a skillet I threw together with chicken, green pepper, spinach, basil, garlic, onion, kidney beans, and Parmesan, along with what will probably be the last batch of creamy grape salad for the season.

    Some leftover corned beef hash and some leftover chunky chili with beans. Mixed together in a bowel.
    nuked in the microwave. Experiment that turned out ok, not bad, may do it again. :rolleyes:

    This tastes really good.You will have the taste of Parmesan cheese in the meatballs.I am pretty sure you could make this into a meatloaf if you wanted.This is basically a meatloaf only it's meatballs lol.

    My Mom loves crumbed chicken strips - next I buy them I will share a picture and how cheap they are. (I buy direct from the factory.)
    And while she isn't a big fan of sauce on her food, she loves sweet chili sauce. And salad. :)

    Yeah chicken strips and salad (or chips) are our favourite goto meal when you feel a bit too lazy to cook something more complicated and you don't want too much cleaning up afterwards.....they taste pretty darn good so there's another reason :D:cool:
