Fool graphics card two monitors are attached?

I have built a PC solely for remote use via Logmein. The application being run needs 2 screens. I have put a twin screen card (GeForce 7300LE PCI-E) card in and it works fine both sitting in front of it and remotely. However I intended to remove the monitors as they are wasted (it will only ever be used remotely). It appears with these new fangled graphics cards they actually detect the monitors present and when no monitors are connected the graphics reset to single screen mode, with the second screen unavailable. This means if you connect remotely via Logmein it only runs as a single screen system. How can I fool the NVIDIA driver that both monitors are connected when in fact neither actually is ? I haven't found any way in the driver or included software to fool it to use two screens.
One display is VGA and the other is DVI .
Thanks in advance for any advice .. :highfive

Why can't you enable the second monitor when you access the machine via logmein? Seems like that's the obvious solution.

Unfortunately the option to use the second screen is greyed out and not available when the monitors are not physically attached.

If the application you're running requires two monitors, I would think you need to have two monitors attached to that computer. Your thinking here doesn't make sense to me. Let's see what others have to say.

To try and clarify.. The data required for an application, and the licences to run the application are in London. The users of the application are in other countries.
A remote user with a twin screen system in Antarctica will connect to one of the PC's in London and run the application, viewing it on their two screen system. There will be 5 of these systems stacked up in the computer room in London and nobody will ever sit in front of them in, they will only ever be used remotely. Therefore they will have no keyboard, no mouse, and I hope, no monitors.
