Whats For Dinner To Night.

    I am having a couple of bowls of.

    Gluten free rice
    Mixed with
    Black beans
    butter
    a little salt
    And some shredded cheese.

    I ate 3 eggs in the morning for my protein and eating rice and beans for fiber.

    Taste just fine with out it.

    Thinly sliced smoked leg ham and salad. The salad has sliced iceberg lettuce, sliced red onion, sliced tomato, sliced capsicum, asparagus, grated carrot, a sliced egg and a small amount of dressing made with salt, pepper, cold pressed virgin olive oil, balsamic vinegar, a crushed garlic clove and with the juice of a half a lemon.
    Desert will be fresh fruit salad made with diced fresh pineapple, diced apple, fresh strawberries, fresh blueberries, kiwi fruit, passion fruit, sliced orange and sliced peaches.

    No problem Tim and and the dress code is casual ;)
    Just had the gardener mow the lawns and weed the gardens so it should be nice to sit out in the backyard in the shade of the big bottlebrush plants watching the honey eaters hovering around the flowers and drinking the nectar

    Dunno.

    I prepare dishes a few days in advance (time economy) so haven't decided if having:

    • One of these Thai dishes with rice: Massaman curry with Chicken or Red Curry Chicken with vegetables and basil or
    • Moroccan Beef and vegetables with Cous Cous or
    • Roast Lamb with Italian seasoning and salad.
    So, above covers next five days:D

    Always a favourite of mine with a Neapolitan sauce and Parmesan cheese (left over spag and sauce I mix with eggs, cheese then bake in the oven , and serve with a Greek salad - yum)

    Friday is always fish & chip night..... I have two grilled flake (gummy shark), some chips (not french fries), two fried dim sims and a pickled onion :D

    I usually cook dinner most nights and I am always looking for something different to cook but I'm a picky eater so I don't venture to far from my favorites beef, pork, and chicken breast.

    Two year old post but there are some interesting ideas for something different and some good simple home cooked dinners. It seems the taste for some foods vary from country to country which makes it interesting.
    We don't all agree on how to cook some meats like steak for instance. People get serious and opinionated about that topic and how to best make a good cup of coffee. :p
    There are some good cooks here at Major Geeks.:) Of course eating out is sometimes enjoyable also.

    Chicken breasts, grilled with lemon pepper on the BBQ and accompanied with some steamed carrots, string beans, corn on the cob and with an oven baked potato with cuts in the top sprinkled with paprika.
    Desert is a piece of Key Lime Pie with fresh whipped cream.:cool::D

    Tonight, Moroccan seasoned chicken lightly fried with teaspoon virgin oil and seasonal vegetables steamed or side salad with seasoning (still to decide which/how - love my kale with all meals cooked or in place of lettuce in salads) finishing with mixed fresh fruit.

    (Gotta watch cholesterol levels!)

    Yep it's delicious and really easy to do.
    The fancy name is Hasselback Paprika Potatoes :rolleyes:
    Pick some medium sized potatoes that when cut in half will be one serve.
    Peel and cut in half so they have a flat base to sit on then make lots of parallel cuts that go from the top to about half way down to the base.
    Get a flat oven tray and either grease the bottom or cover with non stick baking paper.
    Start heating the oven to a medium heat about 350F
    Melt some butter and add ground black pepper, paprika (you can also use cayenne pepper) and salt to taste and mix well (olive oil also works instead of butter)
    Before you brush the mixture on the potatoes make sure you dry them with paper towel as this makes the butter stick better. Here is a tip......I put the butter mixture in a small plastic bag and add several potatoes at a time and roll them around squeezing the mixture into the cuts until they are well coated with the butter mix.
    Arrange on the tray so they aren't touching each other or the sides of the tray and put in the oven until the potatoes are soft in the centre which should be about 35 or 40 minutes.
    Serve when ready.

    Should look something like this.

    Roast leg of lamb with roast pumpkin, roast parsnips, roast carrots, roast potatoes and maybe even a roasted onion (if mrs j wants to risk it lol) . Accompanied by some steamed peas and broccoli. and of course it wouldn't be a lamb roast without the homemade pan gravy and some mint sauce.
    Desert will be some diced fresh fruit with vanilla custard that has a light sprinkle of nutmeg.

    Navy beans cooked with the bone and ham meat left over from Thanksgiving. The ham flavors the beans so much that we have cats that will eat the beans. Normally have cornbread with this but skipped it this time.

    Oh - and wine!

    Porterhouse steak cooked rare topped with some fried onions and with boiled baby taters topped with butter and rosemary and a nice side salad with french dressing.
    Desert is diced fresh pineapple with some fresh strawberries, some diced apple and a couple of passion fruit all covered in vanilla yoghurt...yum :)

    Since we had Flank Steak on Thanksgiving, we will have some Turkey brisket with smashed potatoes and peas....and of course, gravy!!

    Defiantly not HEALTH FOOD but good Southern Comfort Food, Country Fried Chicken Steak (actually baked) With White Gravy, Mashed Potatoes, Black-eyed Peas, and Yeast Rolls.:)

    The kids came for tea and requested a lamb roast with all the roast veggies and peas and cauliflower.
    Desert we had a cookies a cream cheesecake with fresh strawberries.
    For drinks we had a couple of bottles of 2005 Tahbilk Shiraz from my wine cellar.
