I have windowsxp home installed as my main system.
At some point I installed windowsxp pro and
I had a dual boot. Then I erased the windowsxp pro partition but the dual boot remained. So I had to choose every time I opened my pc.
Then I installed Vista and had a new triple boot which said:

    Previous windows version
    Windows Vista
    Windows

So now to boot my xp I had to choose "previous windows version"
    and then "windowsxp home".

I erased the Vista partition but still the boot remained the same.
So now I have to pass from two screens of options just to open my pc
and I only have windowsxp home installed.

I have so many programs installed and organized that it would take me two
full weeks to make the same system from scratch!

Is there any SAFE way to fix my boot without risking my system
    not booting?

Start / run / type "msconfig" without qoutes and go to boot.ini ...click on the button to check all boot paths ....it will tell which are invalid and you can delete them.

The problem is your "Boot.ini" file on your hard drive. This is a hidden file and can not be seen unless you make some changes to your system. Please follow these steps:

Open my computer, or windows explorer (same thing)
from the Tools menu select Folder Options
    Select the "View" tab
under this tab there are three options you should change
    1. under hidden files and folders select "show hidden files and folders"
    2. below that, uncheck the "hide extensions for known file types"
    3. below that, (optional) uncheck "hide protected operating system files"

These three selections will show you all the files on your hard drive. Previously hidden files will be shown as a see-through icon with the full name showing. Navigate to the root of your C: volume and look for a file called boot.ini. This file contains the instructions for Windows to choose or select which version of Windows you would like to run.

I will tell you that I am not familiar with Vista, because I do not load any Beta software on my system. I am guessing that the boot.ini is the same as in XP. Open the boot.ini file. It may say something about being a read-only file. Ignore the message for now. Copy it's contents to a new post. We can go from there. Thanks

Well , I followed what TimW said, msconfig found the xp professional boot invalid and I erased it .But this works the second screen is gone.Only the vista bootloader remains and I do not need it at all.
but I did put normal start so the xppro got back.
Now there are both screens so these files are with both boots.

Anyway I enclose all the boot related files found on my two
    hard disks c: and q:

Also there were two boot folders on both disks called "Boot" and "BOOTWIZ"
but I could not upload them because of the size limit.

I think vista handles boot differently and on msconfig it says exactly:

;Warning:Boot.ini is used on Windows XP and earlier operating systems.
;Warning: Use BCDEDIT.exe to modify Windows Vista boot options
