If in your XP Home you put your XP Pro disk in a Autoplay Menu should come up then click on the button next to, Install Windows XP, a new window will now open, with this you have the option to upgrade which will keep all your files and folders.

If you need for info don't be afraid to ask for it. :)

You can't just uninstall Windows at all from XP bootable CD, apparently this action has never come to mind of Microsoft:)
But if you don't already have any useful information in your old XP Pro, just format partition which it was installed on with the help of any partition and boot manager. (as to me I use Disk Director Suite)
Most probably that windows loader will have a line about deleted XP Pro as also after it and will offer you to choose between two systems during booting.
To prevent it you can edit boot.ini file.
