Easy CD to mp3 for mother-in-law?

My mother-in-law has asked if I could help her convert some of her old CDs to mp3s so she can have a single ridiculously long mp3 CD for car rides and whatnot. Normally I'd use ISObuster to pull the raw data off the CD, then use RightClickMp3 to convert them to mp3s. It's not the quickest or easiest way, but it's always worked for me. Thing is, apart from getting my help to start up with a few CDs, she'd also like to learn how to do it herself. So after years of using my ISObuster/RightClick combo, I'm now trying to sort out an easier way of converting a CD to mp3 for her.

I have iTunes on my Mac here at work and, although it seems to take a little *too* much control from the user for my taste, it seems to be able to convert a CD pretty quickly while keeping artists names, track numbers, track titles, etc. intact for the final mp3, which is all very important for her so she doesn't have to do it herself. I'm not, however, familiar with iTunes on a Windows box- is it pretty dummy-proof to convert? Are there any other "1-step" free converters folks could recommend?

    Thanks,
