Exchange 2003 - Need Help!!!

So I have until Monday to figure this out and I don't know where to start. I am setting up a Windows 2003 Server with Exchange 2003, and I will be setting up email for our domain. (Example: user@company.org) However, I need to figure out how to set up multiple sub domains on the same server as well. (Example: user@stl.company.org and user@chi.company.org)

I tried to google this and have no luck. If someone can point me in the right direction that would be great!

Any help is highly appreciated!!!
