It slipped my mind that it was indeed Thanksgiving today in Canada. I was talking to an old friend of mine who lives in Ontario and she told me it was a holiday for her. Anyhow, Happy Thanksgiving to the Canadians here. Also, if you're in Baja Canada (Seattle) same to you.

 

Duck is awsome,I bought and cooked my first roast duck about 2 years ago so I would be 27 when I tried my first duck and it was amazing,I got the timing just right so it was juicy and tender and still pink in the middle.

Much richer flavour than chicken and much richer price too,yup have a good one Augie.

 

Happy Holiday Augie.I love your "don`t throw the skin out line".When we have turkey I always get as much of that golden brown, buttery, sweet tasting skin,that I can get away with.Most in my family don`t eat that part,but luckily for me my cholesterol is really good,not like my blood pressure.Hehehehehe
