I'm trying to speed up a relatively old PC by installing additional memory, but I'm confused on the appropriate amount/type of RAM to install. Any suggestions are greatly appreciated.

Crucial says it will take up to (2) 1gb sticks of DDR PC3200. You don't have to buy it there but it is a reliable site and the price isn't too bad for DDR memory which is getting more expensive as it becomes less available. That $65.99 is for two modules. You don't have to install in matched pairs so you could get just one module which is probably enough to make give your OS some breathing room if you don't run a lot of memory intensive applications at once.

I have only two memory slots on my motherboard, currently with 2 256MB sticks. Would I be better off buying a 1GB stick, and keeping one of the 256MB sticks in, or buying a matching 512GB set? I'm not sure I want to pay for 2 1GB sticks...

If it were mine, I'd buy a 1GB stick because then you'd have a total of 1256MB.
If you bought the 2-512 sticks you'd have a total of 1000MB. More RAM is better.
