Here's a video showcasing the problem: It's really a huge handicap in an everyday use, please help me fix this ... I've tried changing languages, the problem is still there ...

My keyboard is a wireless Jedel WS3000

PS : This problem happens everywhere (Word, Excel, Chrome, even in MMORPGs) and i'm pretty sure i didn't spill any liquid on the keyboard since it's new and i rarely used it because i mainly play with my controller ...

You need to try another keyboard. If it happens with the new keyboard, the problem is on the computer side. If the problem goes away, your keyboard is bad.

But can't i do anything about it if it's from the keyboard ? like force the keyboard to not act that way with some 3rd party software / script ?

I don't see how unless you can pinpoint the exact cause and that would not be easy. There are only 9 wires in a USB 3.0 connector but most likely over a 100 keys on your keyboard. That means a pretty complex circuit layout under the keyboard with many places where something may be wrong. You can start by flipping the keyboard upside down and tapping the edge of your desk to knock lose those cookie or potato chip crumbs.

Either way, you still need to try another keyboard (or try your keyboard on another computer). There may be nothing wrong with yours.

If it is new and it is a hardware problem which can only be determined if you try another keyboard, then you return it and get a replacement or your money back.

You don't want to be fussing with the keyboard and break it. Then it will be completely unusable.

First, you have to do what Bill suggested. Try another keyboard. That's the only way to determine if the problem is the keyboard (hardware) or some setting on your computer (software).

I've tried a wired keyboard, the problem isn't in the software

Then you have little choice. If the keyboard is still under warranty, contact the maker. If not, you can try using a keycap puller to remove all the keycaps to make sure no crumbs or other foreign object is stuck in one the switches. Otherwise, time for a new keyboard.
