Microsoft Outlook 2021 Can One Open And Minimise An Email ?

Hi, in Msoft Outlook 2010 I have all my inbox emails filling screen, paperclip, flag from, subject, date.
I d/click an email, it opens in a floating window, I can minimise that opened email, repeat a few times then sort through what I have minimised,

in a screen shot of 2021 the opened email doesnt float, it squished the inbox list into a thin column
Is there an option to make it do what 2010 does, as losing the ability to see the inbox like that is the act of an idiot programmer, it worked well, why wreck it.

I also dont like the bland almost colourless insipid interface, what was wrong with yellow folders, in windows folders are yellow, like motorway signs are blue, we like it that way, familiar territory.
When I get to remake this win7 into win10 I want folders yellow as before in all aspects of this PC. in windows explorer, in save as and open windows in progs and so on.
