Will a given file work correctly if we move it from an Apple-formatted external HD to an exFAT formatted HD? We are thinking of making the big switch from Apple to PC and need the PC to be able to run existing files. Thanks!

It depends on the format of the files.
If the files are proprietary (application specific) then it should not be a problem if the program is available for both Windows and macOS.

I suggest you copy rather then move. Why? Because if is doesn't work, the file will still remain on the Apple formatted external HD.

You are mixing terms here. Are you talking about running Mac programs or opening Mac data files?
