Its time to upgrade the office, we are just running 5 separate window machines now. Should I go back with 5 new ones or do a server type setup. Thanks

Not answering your question, but asking and throwing in some more ideas... What does your team use Office for? There are free office options out there that might serve your needs. Libreoffice, for example. Then, there're also online options, including from Microsoft itself.

Sorry maybe I am throwing people off with the word Office. This is the workplace not the software.

Is your current hardware Windows 11 compatible? If not then your OS will be out dated because of your hardware. If it is 11 'ready' maybe just do some upgrades like more RAM and SSDs.
Why do you need a server? share some files or control your users access? to uses group policies to implement control over the desktops? Centralize security. Sharing files and controlling access can be done with a simple NAS like a Synology or build your own with a free NAS OS. There is a Linux called Turnkey which has a "Domain Controller" option.
