We have our primary busness server (Win 7 X64) running 50 miles from here. The ten (10) local PC's are a mix of XP and Win 7. All the local PC's have tethered internet connections (no wireless in the building). Each local PC has its own printer attached as a local printer. The local printers are a mix of 4 different brands/models.

We have our business application running on the server and use a .rdp script to open one or more windows for this software (see below).

For whatever reason my laptop will usually print to my local printer without issue, and then for no apparent reason switches to a PDF writer when printing - forcing me to reboot to reestablish the correct default redirected printer.

    Any idea what causes this?
Is there a way to explicitly define a default printer for each RDP session?

Any thoughts or suggestions would be appreciated.

I am not sure i understand the problem.
the default printer changed everytime you open remote season to print?
its changed only on your laptop? or on the clients to?

I dont have alot of knowledge about remote printing and this script,
but try to make GPO that force the default printers on all the clients and your laptop and see how its work.

The default printer changes DURING the session. Switching from a regular printer over to a PDF writer.

    Well, i know.
but some folk got this problem and after they made this change \ create a new GPO it solved.

i know that when you connect to remote PC you use the remote PC default printer setting not your laptop.

if this problem caused from the application you use so i have no clue.
but noting bad will happend if you will this solution.

also this folk got semiliar problem and peoples offer him a few solutions

The info is out there, but you are going to have to learn to use the tools to do it. RDP is a bad choice in remote procedures into a network, since there are better options. Also having a dedicated printer per each workstation is not the best solution.
