I was asked to set time on a server...
I always over think things (as not to get in to deep)
I can fix time on a 'desktop' server (a beefy pc running as server) because it is like a regular desktop - you can go into BIOS and set the time.
How would one do such a task with say a rack mount?
I have little experience on real servers.

    What server OS?

If 2k/2k3 you should be able to double click the clock on the bottom right hand corner of the desktop, then set the time.
