   Do I have to install SP1 then SP2 on a fresh install of my old Windows XP Pro CD, or can I skip SP1 and install SP2?
   
   Just curious as to whether I need to create a new 'Fresh Install' CD and add/remove some updates/patches...

   no, sp2 includes all the updates from sp1 and all the post sp1 hotfixes. You only need to install SP2.
