Thanksgiving Day

    Happy Thanksgiving Everyone.

    Who is cooking? Do you do the traditional meal of turkey and dressing? If not what do you have for dinner?
    My family always does the same traditional meal of turkey and cornbread dressing, pumpkin pie and pecan pie and way too many other side dishes. Leftovers for days.;)

    Hi kat! We do traditional turkey dinner too and I'm hosting. We have pumpkin pie though and regular stuffing.

    So I learned a tip with stuffing a few years back. When I started hosting and making the turkey I didn't want to stuff the turkey...not for safety reasons because I find that silly as I've never heard of anyone getting sick from stuffing in the turkey...but because I think it dries the turkey out.

    Anyway...so the tip....my dad makes his stuffing and then puts it in a big disposable pan. Then you brown individually bought turkey wings (which are cheap), lay them all over the top of the stuffing and bake. It tastes just like it was in the bird. :)

    I always brine my turkey over night. I get it fresh from a local farm. Usually I just do the normal salt and water (and maybe sugar), but this year I'm using this recipe:

    I live alone in a seniors mobile home park. I don't do much cooking. I some times make a reservation for a holiday meal at the club house.

    This will be a rare first Thanksgiving treat. All our kids are out of town or otherwise engaged so we will be ALONE for the first time in forever. Also, it is our 25th anniversary so will be a special day. To celebrate, we are going to abandon the bird for a cozy ham steak dinner with mashed potatoes and asparagus. Yummy. A tad of wine and thou (you know). Nice little relaxing evening alone without having to schedule meals, get everyone together, etc. Just us two for a change. Romance is in the air. Update to follow (if I survive)......

    We usually have a traditional meal, but my sister and her family are staying at home, so it will just be me and my parents. We are not huge fans of leftover turkey, so my Mom is cooking 'Burgandy Beef" Basically beef cooked in a gravy mixed with wine, served over rice. Very tasty, and not near the work to fix and clean up. Plus, it is one of my favorite foods.

    I used to do up the full deal, turkey, mashed 'taters, gravy, stuffing, squash, cranberry sauce, stuffed celery, scallions, olives, pumpkin pie and apple pie. But, that was when there were 5 people in the house.

    Now, there's just me and my sister so, I've cut back on a lot of that. We get Cornish Game hens which I do with a browned sage butter, Stove Top stuffing, squash, cranberry sauce and pumpkin pie (with whipped cream of course). It suits the two of us quite well.

    Since it is just my husband and me (no children, I'm an only child and my husband's only sibling lived in FL while we are in PA), we dine out.
    BUT on Black Friday instead of all the crowds, I cook my Thanksgiving meal: turkey breast, stuffing, candied sweets (with carrots in there this year), whatever veg. I feel like making (this year I'm trying my hand at sauted Brussel sprouts for my hubby and corn for me), cranberry sauce, pumpkin pie and some sparkling wine to go along with the meal.

    While the turkey is in the oven, I will finish the Christmas lights I put up last week when it was much warmer. I never turn on the Christmas lights until Thanksgiving is over so tomorrow night will be the first lighting and any troubleshooting.

    Let the eating begin. And all the great leftovers mean no cooking for a few days.

    My mother-in-law has been hosting Thanksgiving dinner since I moved here, since the whole family still lives in the same town. She has been using that exact recipe for the her turkey for the past few years, and the turkey always comes out amazing. Excellent choice of brine! ;)

    Good to hear that kind of real life feedback! I'm hoping so.

    My turkey is a monster! I did a range of weights from this turkey farm and was hoping for the low end (21-25 lb). I got a 25 lb bird!! Omg...I was seriously worried about it fitting in the pan and oven. It did, but I had to use a huge utility bucket to brine it in.

    That what MiL said she got this year as well! There are only six of us, so we're looking forward to lots of leftovers! :)

    And she actually cleans out a giant cooler (the same one that holds the beer and sodas when we have 4th of July BBQs) to brine her turkeys. Something to try next year, maybe?

    Twenty pound turkey deep fried in peanut oil, Mustard, collard, and turnip greens. Sweet potatoes, potato salad, green beans, mac and cheese, corn meal dressing, cranberry sauce, apple desert, and more. Not my usual Thanksgiving day meal, but close enough. Am working this evening, good to have friends to break bread with.

    Bugballou certainly has quite the meal!! Wow! giving thanks! and also friends to break bread with. I had roasted chicken - new recipe,was good ( only myself, i opted to stay in ), mashed potatoes, acorn squash, sweet potato, cast iron skillet blacken green beans -new & also good -home made cranberry sauce. For dessert - coffee!!! , more cranberry sauce and an apple. I was surprised how great the apple tasted, I already had banana cream pie and apple bread with others, and will have more sweets tomorrow with others. Now I will have a bunch of chicken to freeze for later meals.

    To be thankful, I am! but my bird missed the usual salad, and corn, so I had to get her some corn along with the mashed potatoes later. She will have to wait till tomorrow for the salad!

    Laura I did not have all those ingredients on hand and did not want to deal with the crowd at the grocery again. So I put what I did have in the brine and hoped for the best. It actually turned out pretty good. I only cooked a turkey breast as we don't like the dark meat. Next time I will plan ahead and use all of the recipe you shared.;)

    A good Thanksgiving day all around with much to be thankful for!:) Thankfully no Black Friday shopping for me either.:eek:

    I made my Thanksgiving meal today. I tried 2 different things. I put baby carrots in with my candied sweet potatoes. I also made Brussel sprouts for the first time. I googled for recipes and sort of combined two that sounded good.

    I took the sprouts out of the freezer 20 min. before to let them thaw a bit. Then I cut them in half. Actually, I could have waited a few more minutes because some were still hard to cut and I didn't want a trip to emergency as part of today! Then I got out my cast iron frying pan and sauteed the brussel sprouts with onions in bacon fat. Anything with bacon is great in my opinion. (season with salt and pepper at the end before putting them in the serving dish. They got nice and brown. My husband declared them great. So, I guess we have a winner.

    After that was done and while my husband cleaned up, I went out and finished my out door Christmas decorations so I can let the timers turn them on tonight for the first time.

    Now it feels good to just sit with a cup of coffee. The pumpkin pie comes later tonight.

    I thought it was good too Kat! I think I'll try it with a smaller turkey next time... or even the next time I do a chicken.


    Yummm. I love Brussels sprouts and that sounds great.

    All turned out wonderful for mine. I love having my whole family together. :)

    There is a whole list of things I won't eat. Ever! Some of the vegetables on that list are brussel sprouts. turnips, collard greens, artichoke, garbanzos, mushrooms, mustard greens, okra, cooked spinach, and turnip greens to name a few. The do not eat meat list is long also.:p Very picky eater!
