Isn't it better to have fewer sticks of RAM for the same amount of memory?

It also depends what configuration you have . With some motherboards and Amd processors if you use all the memory slots with dual sided ram it will lower your memory speed from 400mhz to 333mhz which is not a big performance loss. With some larger ram sticks say 1 gb you will lower the cas latency of the ram. On Amd systems usually the cas latency is key, now on Intel sysytems not sow much they are need the bandwith of higher speeds so it the cas latency really does not matter. Long story short i depends on what configuration you are running with the total sysytem.
