   I have been running an experiment with Thunderbird while using my Linux Mint with 2 email programs. It works nice, but I dont spend all my time on Linux Mint and go back to windows.
   My question is can you set up Thunderbird to work on both Linux and Windows on the same pop servers and same account?

   Yes, just make sure in the account properties that leave copy of email/messages on server is checkedd as it will allow both OSes and Thunderbirds to gain the same email, until you delete them.
   
   Which version Thunderbird BTW? and grab the latest version for Windows HERE
