If you are saying you have Win 7 on the first hard disk and have installed XP on a second hard disk then overriding or changing the BIOS boot order should boot XP. You can use an F key to override the boot order, mine's F8, yours may be different.

If you wanted to make this a more permanent arrangement then you would need a new boot manager, but that's for another day ;)

Have you loaded Windows 7, on to another hard drive, without the XP hard drive connected?????? - then connected the second hard drive???
Generally, I would have the XP hard drive running, and then usual shut down, connect new hard drive, then see that the new hard drive is recognised by XP in disc management, format the new drive, and then restart with the Windows 7 disc, and choose to install on the new hard drive - then XP,S bootloader is not messed up, and you get the choice available at startup.
It will want to go into Windows 7, when younstart up, or, will offer 'earlier version of Windows.'
To go into XP, you just click on earlier version of Windows, if you don't. after 25 seconds, it will automatically boot into Windows 7.
I run multiple partitions, and XP, Vista, and Windows 7, and that's how I have always done it, after having your sort of problems, earlier in my geeking days.

If you only want to use the XP hard drive for extra space, then you can format it from Windows 7, then add as storage.
Click Start, right click My Computer, choose manage, thenclick on disk management, choose the second disk (usually disk 1)- check that it is the XP hard drive, by its size, to be sure (click on the disk 1, and right click properties)
If you want any information from that hard drive, as it is-
    Start in Windows 7
CLICK sTART, CLICK COMPUTER, and the second drive should show,as say-- E. OR, F depending what dvd drives you have connected.
    CLICK ON THAT HARD DRIVE
    CHOOSE EXPLORE
AND , WITH LUCK YOU WILL SEE YOUR DOCUMENTS, ETC:
