how does trial version software know that the trial version is up if the program is uninstalled and then reinstalled.
Is something stored in the registry?

Could be in any number of places..the registry...windows, system, system32, etc.....there is usually one or more files..be it a a log, ini, dat, temp etc. There is usually 'something' that does not uninstall to prevent users from going beyond the trial period.

you might search the whole drive for files created when you installed, or modified when you last used the program. An uninstall would not remove a tracking file. Delete or rename the right file, and it should think it's a fresh install. Most likely they use a file, versus parking a few bits somewhere, although they might use a registry entry for the same thing.
