Win10 File Explorer

New User of Win 10 due to Win7 Computer Death. I rename a lot of files to do with ancestry and I cannot work out how or why the file explorer will not update the change to a file name instantly like Win 7 did. Also I would like to be able to make the folders to always open Size all columns to fit. I have tried but when I reopen folders later it has gone but to the old way I would like all folder to open to a prefered view but when I use folder options it doesnt seem to work or I am not doing it right. Please advise How.
