Adobe Acrobat Question

I'm working on an Adobe Acrobat project and would appreciate a little advice. What I'm getting through on-line research is a little confusing.

Currently, teachers have several student progress report forms which are completed on a progressive basis. Right now, the forms are in MS Word. The teachers simply print the forms, complete them by hand and put them in the physical student file. When it's time to add information to any of the forms, they go to the file, retrieve the form, add additional information by hand, and refile.

The project is to convert the forms to Adobe Acrobat format with "fillable" data spaces. It's clear that we need a copy of Adobe Acrobat to convert the forms, but I'm not sure about Professional or Standard versions.

I'm also not sure what each of the teachers (approximately 20) would need on their desktop systems in order to complete the "template" document, save it to the student's electronic file, and then retrieve it later for additional information.

Any thoughts, comments, or experience would be most appreciated.

    Thanks.
