Home-made stew last night...thank you Bambi for your contribution. My Pop made the best damned stew....venison steaks chopped up, taters, onions, carrote, cooked with a cup of apple cider cooked slooooooooooowly in a crock-pot. I`ve always loved conventional beef stew, but I`ve NEVER had a stew as good as this was...and he may not know it yet but I`m going back today for seconds(actually thirds) heh heh heh

That sounds good, but I have to tell you my best recipe for venison.

Take the steaks and butterfly them, then marinate them in Worcesterchire sauce for a few hours. Saute the steaks in butter and onions.
They are so good and tender.

Now I am really hoping the hubby gets a deer this weekend... You made me hungry for venison.

The first time I venison, it was so bad, didn’t want to ever eat it again………friend of my Mom and Dad’s marinated the venison in a strong red wine for three days….and we did a big group BB&Q, while camping….somebody cooked all juices and it was hard as a rock, and a bad tasting………I have four brothers and a sister, three of our kids, were born in the same week, but three years apart, so we had a one, two, and three year birthday party for three kids. My brother is a hunter, and used a leg part, to cook what he calls, “flip flop” on the BB&Q, sprinkle your own salt & pepper, and other things on the venison, flip it over to cook, and spread butter on one piece of sourdough bread…he uses a long about 18 inches sharp bread knife, and thin slice some meat, and make a open face sandwich….wobbles

My personal take on venison...horrible. Too gamey. Most people I know that eat it and like it, have disguised the taste. Elk and moose are way better, they can be eaten without any disguising.

If you don't like the gamey taste just soak it in milk overnight before cooking....doesn't taste at all gamey then :)

Venison that tastes gamey is venison that was improperly processed/prepared. The stew I mentioned, and the ground meat/steaks/roasts....NEVER taste gamey.

I prefer Sasquatch stew myself, but they are getting hard to find. And take too long to pluck (the hair). :p

A lot of creatures that eat grass can taste "gamey", it's the chlorophyll in the grass they eat that does it. For example, here Kangaroos are often for human consumption. Some have been 'orrible and gamey tasting, others have been okay. In general, the older the animal, the more 'grassy' it can taste.

I used to think that, too. They are so beautful to watch.

But, we are so overpopulated now In Minnesota. They are everywhere. So many getting hit by cars, people getting hurt, even killed .
I see ar least 4 or 5 every morning while driving to work.

There were 37 deer struck and killed by cars this weekend in my county. Not only is the monetary factor(vehicle damage)a problem, but potential injury to drivers and passengers, and a slow painful lingering death for the animal. Like many places the population is huge, and that`s why the NY DEC issues so many doe permits, and farm/nuisance permits. Crop loss in this part of our state has been estimated at anywhere from 20 to 70% for some of the area farmers. We live in the village and see deer regularly. A beautiful creature...and harvested wisely and humanely...they`ll be with us forever.

As was mentioned, thaw or,if fresh let stand, the wild game over nite in milk (I use condensed milk) and most of the gameyness disappears. You can also use Whiskey but then the whiskey tastes gamey, so i suggest drinking the whiskey and then eat the game raw. Makes it taste just like chicken. I really like wild game especially rabbit but turtle runs a close second. Anyone ever had fried snapping turtle?

I`ve had turtle soup and didn`t much care for it. I`ve never had fried turtle though. I`d give it a try.
