    T'was the night before Christmas and all thru the house, not a creature was stirring except Timmy on the couch. His legs were a twitchin, his buttocks were sore, when all of a sudden there arose quite a roar....his wife had come home with presents galore. She furiously boxed and wrapped them in ribbon. While Timmy took a pain pill and started to snore.

    Ask, and ye shall receive. :p The stone jar holds my mother's home-made pickled herring, the small glass jar with a black lid holds mustard-pickled herrring from a nearby deli. This little display is today's breakfast, composed of some of the left-overs from yesterday's Christmas buffet. Yummy. :yum

    @Mimsy- The pickled herring seems to have a story.

    Is this made specially for certain holidays or is this a regular/staple pickle?

    I think, I see Salmon, on the quarter plate and is that Gammon, on the plate behind the stone jar :drool

    Yes, that is smoked salmon on that small plate. I have no idea what Gammon is, but on the large plate behind the stone jar is thin slices of dried lamb shoulder, dried beef roast (soaked in very salty solution of various spices before it's dried in the oven), and there should be slices of a mustard glaced ham on there as well. The meat on the last plate is smoked reindeer, and the pie has a filling made from cheese and more cheese. :)

    Pickled herring is from the Good Old Days of Swedish cuisine, that is before the days of freezers and fridges, when salting, smoking and pickling food was the only possible way of preserving it. I like pickled herring, but I am led to understand that it is an acquired taste.

    Nice spread there Mimsy, a tad too rich for me as a breakfast.:) I've never had pickled herring, just salted. Is the herring crunchy?:p :-D

    Oh, I'd love to have some reindeer but I don't think that they're farmed here which means that only hunters can have the meat and they can't sell it, same like moose. I'll have to check that out, I don't even know if we have reindeer up north.:-o

    That's what we're having then. :yum In thin thin slices, and coated in mustard glace before baked in the oven. I personally prefer it on thin crisp bread, my father prefers lots of it with potatoes and apple sauce. No one else likes it (strange people!), which is good, since that means more ham for dad and me.:)

    That's got my mouth watering, i am really jealous.

    I remember when i was young,my father was a lover of gammon and he used to get slices about 1/2 inch thick and cut the fat about every inch around the edge to stop it from folding then put it under the grill until nice and crispy served with slices of pineapple.

    Ham? That's not a ham. That's an over-sized steak. A real ham is red, and the most tender, juicy thing out of the pan you'll ever taste. I know, I had some for Christmas dinner. Here's some in left over form.

    The only reason a ham is red is from the cure that is added/injected, either sodium nitrate or nitrite, can't remember which ATM and that's what gives it the 'ham' flavour and not just a piece of pork steak. No matter how long one cooks ham, it will will always be red as if it's not done yet. People do things differently in other parts of the world.:)

    I was just about to say that. ;) A "real" ham is of whatever color is produced by the chemicals injected in it. And it is very juicy and it tastes great. :yum

    Welp, one of the Turkeys has just been demolished here. One of the hams is about one third gone. I'm giving away turkey and ham to everyone I can, just get it out of my sight, LoL! :yum

    I'm sorry, but no. That pig? I raised that pig. It was injected with nothing more than an Iron shot and some antibiotics to prevent infection. That was an all-natural pig. And she was utterly delicious and supposed to be red.
