Is there a way to permanently delete and/or remove old apps and games from the Microsoft Store library? Most of the apps/games I downloaded to try are ones that I will not download/use again, or in the case of MS Bingo and MS Jackpot, have been discontinued/are no longer supported by Microsoft.

My system information is as follows:

    Edition Windows 10 Home
    Version 20H2
    Installed on ‎5/‎22/‎2021
    OS build 19042.1165
    Serial number PF1RK5GP
Experience Windows Feature Experience Pack 120.2212.3530.0

Are you referring to Windows apps on the actual Store? If yes then there’s no option to hide them any longer so removing them from the list is certainly not an option. You should be able to sort by installed which would place those unwanted/uninstalled apps at the bottom of the list.
