Sweet and sour pork is always a favorite. Pork tenderloins.

My comment would have been "There is only so much store-processed meat I can eat" and kept the whole hog! ;)

BBQ the ribs with some awesome spicy sauce; sweet and sour is a great idea too; if it is too gamey for your liking, just soak steaks in milk for a couple of hours beforehand...then just flour, pepper and johnny salt them and skillet fry them....awesome!

As a farm boy, I have to agree with you totally.

People think that I have become damn near vegetarian because I feel sorry for the animals. No, it's because I have become a meat elitist. Nothing is quite so good as steaks that were on the hoof and running around a day ago.

It's amazing to me how many people don't seem to understand the concept of where meat came from. Anyone willing to eat meat should be willing to kill the animal it came from, humanely of course. I don't hunt, but that's because I'm lazy. Think I'll get a steak for dinner. Maybe some ribs. Dang, this is making me hungry! :p

Hogs are mean critters in the wild too. Did he say how he killed it?

When my dad retired from the air force we moved to the country. Had a really nice vegitable garden where a cattle lot used to be. Unfortunately we didn't really know what we were doing, so we had a lot of really large fantastic veggies infested with pests. The hog pen being within throwing distance of the garden a new game was born. When the hogs time came it was some of the best pork I have ever eaten, bare none. I suspect the pork had some of the best eating for a pig, bare none. Little extra protein in that tomato didn't bother him none.

I'm having a dumb moment here...so I gotta ask...WHAT THE HELL DOES IT MEAN TO "johnny salt them"!?!?

I'm guessing it either means to salt sparingly, or to salt the living daylight out of them!?!?

LOL...neither. Johnny salt is a brand of seasoned salt...makes anything taste awesome. Of course, 'johnny' has a whole different meaning in the UK, and Brits probably would rather you didn't use this kind of salt on their food HAHA ;)

I'd be willing to kill a cow with my bare hands if I got a decent steak out of it. And none of that silage fed, mass produced crap they sell in markets.

Cook pork anyway you choose and it is GOOOOOOOD!. I am not a beef eater but Pork, Chicken, and Wild Game (especially rabbit) is right down my alley. And don't give me that "Thumper" bit :)

kalua pig. i dont know why, but there appears to be only one way of cooking wild piggy here. dig a big hole, build a tee-pee shaped fire in it, cover fire in large rocks before lighting. light fire. wrap piggy in banana leaves. dump onto hot rocks. bury the whole thing with the dirt you dug up. wait 12 hrs. dig up and eat. its slightly more detailed than this and i would be happy to give further instructions. what i can say is i have never eat anything better! good wood helps. they use 'kiawi' (sp? pronounced 'kee arvee"), which smells and tastes a bit like rose wood. much aloha

    Thanks all

Some great ideas -Since I have a 1/2 pig I'm going to try the ribs suggested by Lev and the rest in a homemade version of kalua pig suggested by LaurieB. I lived and worked in Lahina on Maui for 4 yrs from 90-94 and I must say your right it is the best way to treat a pig(Oh man now this howlie is missing the islands alot-)

And yes Bill they are very nasty when cornered or spooked. This freind is a excellent bow hunter so he is within 30-70 feet away and with one shot one kill (well 85% anyways) a little to intense for me ,but I go fishing in the area while he hunts and we have a real nice bbq/fry when we get back.
