Is it OK to switch the sata cable from one plug on the mobo to another one? Would I have to change anything in the BIOS or something?

I doubt it would make much difference - can't say I've ever tried but logically I can't see anything wrong with it.

Im asking because the new graphics card cooler Im thinking about getting might get in the way of the SATA wire and I might need to move it over one.

if you only have one sata drive then no problem . if more then one make sure when you change it to double check boot priority in bios.other then that no worries :)
