Time Sensitive .bat Files

Back in the days of DOS I had a nodding acquaintance with TSRs. I have a computer monitoring my front porch as a security system using a USB camera.I would like to figure out how to transfer the .mkv file at an arbitrary time (midnight) to a large disk I have as a USB offline storage. Someone mentioned it was possible earlier on an earlier thread when I was discussing the using a USB camera for a data security device. I tried accessing the article but it was a bit over my head, is there a way to do this with a simpler explanation?

 

I would also like to delete any files that are older than a month if possible (1:00 AM).
