Use of Adobe Bridge?

No it wont affect Acrobat Reader or even Photoshop as Bridge is a seperate program you can opt out of when doing a custom install of Photoshop, its primary purpose is to allow you access to Adobes very large collection of royalty and royalty free stock photos and images for you to use in your images. Its can also do basic image stuff like batch rename, organising images etc.

Did the manual that came with Photoshop or the Photoshop Suite not have info on Bridge?

To check you could go into Add/Remove and Adobe Bridge should be listed if installed.

Yes I tend to when installing large applications like Photoshop or Office etc choose custom install and just install from the list what I really need, as its not worth installing items fromt he package that your not going to use.
