I am recently experiencing about 2 minute shutdown times, which I never used to get. I don't remember anything that could have caused this. Is there a way to speed up the time it takes to safely shut down?

Do some basic PC maintenance like defragging, making sure you don't have too many programs running etc. You could try using CCleaner, available on this site.

Close the processes running bfore shutting down and as prophets suggested, do the cleaning up, defragment for smoother and faster shutdown. How much RAM have you got? See if anything in this link helps you

Try having your power supply tested.Mine went bad and I was having exact same prob 1-2 minute shutdown.Had a fresh install of windows 1 gig ram that tested good ,ran hd tach, and was getting ready to throw stuff. So I turned er of overnight, next morning no dice. The damn thing finally had enough.
    So give er a try

The most likely, almost certain, culprit is a hanging application or service.

    What operating system is it?
