VPN and Security question

I posted earlier asking for recommendations on VPN's, apparently this isn't a topic of great concern here. So in researching possible VPN's, one of the rating factors is security, but I don't know if that is a concern of mine or if it should be. Copied from one review:
"The company is registered in Switzerland meaning that it should be outside both EU and US jurisdiction but their physical location is in the US which not only makes them liable in the US but they also respond aggressively to DCMA requests with each customer being given a two strike rule. This is definitely a big show stopper especially since they keep logs for 30 days! We’ve also had complaints about connections being dropped often and since they don’t use shared IPs there is no deniability if you are charged with any offence – big or small."
Personally, I wouldn't even know how to commit an offence if you told me to. I am only concerned with speed and ease of use while in Mex. I also do online banking and investment from there, but it is my understanding the security for those comes from the website I use, or is it?
So my question is, since I am not interested in spamming or any other kind of illegal activity, do I care about logs or two strikes or deniability or anything like that? Or, is this also somehow also related to security when I am logged into my bank account?
And, as I indicated in my earlier post, my primary interest in using a VPN was so I can watch my Time Warner TV subscription while in a foreign country. I called TWC and they don't have an issue with or block VPN's, so that is all good.
