    Pork Belly and fried rice for me tonight, kinda not too hungry as been in London for a few days so ate loads, had great meal out in the Jane Roe Kitchen (had to change its name as some weird *** copyright issue) on Thursday, so if in London and like Pizza or Burgers try it out as superb place and staff awsome

    Figured I ought to redeem myself tonight... Marinated salmon roasted over bell pepper strips and onions, with Brussels sprouts in butter sauce on the side.

    Bought some Tony Roma's Boneless Ribs in Sweet & Savory Sauce at the grocery because I just don't want to cook tonight. They were a bit pricey at near $14.00, so hope they are good. Probably will not be near as good as home cooked. Going to slice up some potatoes and onions and cook them in a iron skillet in the oven, add some dinner rolls and call it dinner.;)

    I just threw together some avocado-stuffed chicken breast that hopefully will taste as good as it smells in the oven. Haven't decided on sides yet, but I'm leaning toward cottage cheese and some kind of canned vegetable. I used all my creativity and energy on the chicken. LOL

    Tonight I ordered a Sicilian pizza from the local place. They've got decent pizza and it usually only takes 20 minutes, so it works.

    Going to fire up the gas grill tonight. Have some pork tenderloin sliced nice and thick marinating in refrigerator.:yum Slicing up some veggies and cooking them on the grill with a bit of olive oil and some seasoning.

    Last week we were in single digits in temperature and today it is a nice sunny 72 degrees.:)

    After working all day yesterday and being dependent on whatever they were serving in catering, I had to cook tonight or lose my mind.

    I did a smoked sausage and hard-boiled egg casserole, Brussels sprouts in butter sauce, and heated up some Harvard beets.

    Another cold snap and it got down below freezing last night so it is a bit chilly outside. Using this as a excuse to make one more pot of chili before Spring gets here to stay.

    David when you say pancakes do you mean the same thing as we here in USA call pancakes eaten with a sweet syrup and butter, or fruit topping?

    I actually have a day off! Therefore, I've just gotten my corned beef brisket in the oven, and we'll finally get to eat our corned beef and cabbage (and onions, and garlic, and potatoes, and carrots, and turnips). I hate when I have to go this long without cooking!

    Normally I make everything, but work has been so stupid busy lately I cheated and bought Thousand Island dressing, sauerkraut in a jar, and rye bread from the local bakery. Didn't matter...got Reubens! LOL

    Tonight was venison kielbasa (thanks to my 15-year-old nephew who got his first deer last fall) and the rest of the sauerkraut simmered in beer. After ending up with cereal last night because of work, I'm fat and happy again. :-D

    Have never had venison kielbasa but we do like the Hillshire Farm Skinless Polska Kielbasa cooked on the grill. So having that with some Macaroni and Cheese. Strawberries were on sale for $1.00 "yesterday only" so will be having Strawberries. Of course they won't be as sweet and flavorful as the local grown strawberries are in May. Can't wait for strawberry season.:yum

    I have learned how to make lactose free Alfredo sauce! :celebrate

    This has made me very happy, since I have greatly missed eating Alfredo sauce with my pasta. :)

    I have enthusiastically cooked shrimp Alfredo, chicken Alfredo, and a lasagna that called for Alfredo sauce, and plan to experiment more in the near future. The Guy is very supportive of my kitchen experiments. :-D

    I'm kind of infamous for my truly ridiculous, so far over the top that the top is no longer in sight birthday cakes. LOL I subbed coconut oil for vegetable oil, and 3 tablespoons Kahlua for the vanilla.

    It was amazing! And I came home with about 1/4 of it. :-D

    Musksnipe around these parts that hash-brown casserole has two names. One is Copy Cat Cracker Barrel Hash-brown Casserole the other is Funeral Hash-brown Casserole. Around here if there is a death people take food to the family and this is a popular dish to take, hence Funeral Hash-browns. LOL I like lots of cheese in mine.

    Those potatoes are really good with some cooked, crumbled bacon added as well. And crushed potato chips on top! :-D

    Tonight my niece and I took the kids out for dinner because we were all dead tired and starving after the annual spring trip to the greenhouse. We went to http://cheersgrandrapids.com/, where my niece and I lucked into the daily special being something we actually wanted (buy 1/get 1 wet burritos), and the kids had mini corn dogs, cheeseburger, and grilled cheese (in order by age), all with fries.

    Beltine burritos are perfectly serviceable, but they're nothing to write home about. But then I've never thought they were, since all of their food comes from Sysco (or maybe GFS, but it's certainly NOT house-made). Also, they're at Division and 28th, while we're on the north end (Cheers is almost to North Kent Mall on Plainfield), so we rarely go there.

    Is Los Amigos still over on Sherman? Theirs was always the best I could find there. :)

    I'm not saying Cheers has excellent Mexican food, just that it's equally good to pretty much anywhere else around here that serves American-Mexican food. And they're better than Beltline by a long shot...but then most places are.

    Who dug up this old thread? Yeah right it was me. lol;). Was getting ready to make a pot of Chili and wanted to look back at the suggestions you all had for ingredients to make the best Chili so looked here and in Cooking Thread. I think I added most of your suggestions so this will either be the very best pot of chili I have ever made;) or uneatable.:oops: Hoping for something good!

    I don't see much veal in my grocery store but I assume your recipe would be good with very lean beef also.
